way Bourbon n' Toulouse works is quick and
painless. You walk in and pick what you want from the day ’s selections off
of the chalkboard menu and then you order & pay at the register. Can ’t
make up your mind or don ’t know what something is …fuggetaboutit! Just ask
the guys and they ’ll give ya some samples so you know you ’re gonna love
what you order. All entrees are six bucks (tax included) and served over
white rice with two pieces of spiced French bread. The following is a list of
our regular menu items as well as the daily specials that we feature.
Chicken Etouffée– This New Orleans
staple is pronounced “A – Two – Faye” and is our top selling dish! It is a
spicy roux based dish that simply has to be tried to be fully
appreciated. chips.
Jambalaya – This extremely
popular dish is made twice a day and sells out almost every time. You get a
generous portion of this traditional rice dish that is slow cooked in a
vegetable broth containing Smoked & Andouille sausages, chicken, bell
peppers, onions, celery and spices.
Red beans w/Smoked Sausage –– This traditional
Monday favorite is so good that we have to serve it everyday. Popular with
adults & kids alike, this mild dish is great! Try it with cheese, onions
& sour cream on top!
White Chili w/ Chicken This award winning white chili is
incredibly low fat! The white chili is
an excellent mix of great northern beans, chicken, red bell peppers and the
perfect mix of herbs & spices.
Southwest Etouffée w/ Crawfish – For this dish we
make a traditional etouffée and add cheddar cheese, chili powder &
crawfish to give this dish our own southwestern twist.
Cajun Red Chili – Dr. Atkins would
have died for this spicy red chili loaded with sausage, ground beef & a
whole lot of veggies.
Sauce Piquant – A brilliant low fat
red sauce with chicken, onions, peppers and celery and a tangy lemon flavor
that makes this a very unique and popular sauce.
Gumbo – A New Orleans staple. This hearty
soup is loaded with chicken, sausage, shrimp and vegetables and will satisfy
even the hungriest of souls.
Black Beans – black beans are
simmered down slowly in a vegetable broth and sherry until they get that
perfect flavor. This vegetarian delight is served best with a shot of sour
cream and diced onions on top.
Artichoke & Parmesan Cream Sauce
w/ fresh sliced mushrooms – This creamy sauce is damn good. ‘nuff said.
Black Beans & Caramelized Corn – – Black beans
& caramelized corn with red bell peppers in a light cream sauce makes
this vegetarian dish popular with both vegetarians and carnivores alike. If
you don ’t get this with cheese, onions & sour cream then there must be
something very wrong with you!
Black Beans w/ Cajun Sausage – The black beans are
simmered down slowly in a vegetable broth and sherry until they get that
perfect flavor and then we add an extremely tasty Cajun sausage to them.
Chicken Creole – rich &
flavorful tomato based sauce is loaded with chicken, green peppers and an
array of spices.
Tami’s Thai Peanut Sauce – Thai style peanut
sauce that Will learned to cook on one of his many exciting trips to Bangkok. This Peanut sauce
has baby corn, fresh sliced mushrooms and fresh red bell peppers and is
finished with a cream reduction.
